This incredibly easy Cranberry Chicken Bake features juicy chicken breasts coated in a sweet-tart glaze made from cranberries, orange juice, and honey, then baked until the top caramelizes beautifully.
| Ingredient | Amount |
|---|---|
| Boneless, skinless chicken breasts | 4 |
| Fresh or frozen cranberries | 1 cup |
| Orange juice | 1/2 cup |
| Honey | 1/4 cup |
| Fresh rosemary sprigs | For garnish |
Set your oven to 375°F (190°C). Lightly grease an oval white casserole dish (or a 9×13-inch baking pan). Arrange the chicken breasts in a single layer.
In a small mixing bowl, combine the cranberries, orange juice, and honey. Stir until everything is evenly mixed.
Pour the cranberry mixture over the chicken, making sure each piece is coated well. Bake for 30–35 minutes, or until the chicken reaches 165°F (74°C) internally and the top has begun to brown.
Allow the dish to rest for a few minutes after baking. Finish with sprigs of fresh rosemary before serving.
