  • Carrots – 2 cups, diced
  • Celery – 1 cup, diced
  • Corn kernels – 1 cup (fresh or frozen)
  • Diced tomatoes – 1 can (14.5 oz), undrained
  • Beef broth – 1 cup
  • Cheddar cheese – 1 cup, shredded
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Dried thyme – 1 teaspoon
  • Dried rosemary – 1 teaspoon
  • Olive oil – 1 tablespoon

Instructions

1. Preheat the Oven

Set your oven to 375°F (190°C) so it’s ready for even baking.

2. Brown the Beef
