Hands down, my favorite appetizer of all time!

These Cheesy Tortilla Corn Bites make an ideal appetizer or snack, featuring crispy Tostitos Scoops loaded with a creamy, spicy blend of jalapeño pepper jack cheese, cream cheese, and sweet corn, then baked until hot and bubbly.

Cheesy Tortilla Corn Bites
Ingredients:

Tostitos Scoops tortilla chips1 bag
Cream cheese, softened1 cup
Shredded jalapeño pepper jack cheese1 cup
Corn kernels (fresh, frozen and thawed, or canned and drained)1 cup
Egg, beaten1

How to Make Cheesy Tortilla Corn Bites:
Step 1: Preheat oven to 350°F (175°C). In a bowl, mix softened cream cheese, shredded jalapeño pepper jack, corn kernels, and beaten egg until smooth and well combined.

Step 2: Arrange the Tostitos Scoops on a parchment-lined baking sheet.

Step 3: Carefully spoon a small amount of the cheese and corn mixture into each chip without overfilling. Bake for 10–12 minutes until cheese is melted, bubbly, and chip edges turn lightly golden.

Step 4: Remove from oven, let cool slightly, then serve warm and enjoy!
