Finished with a generous layer of sharp cheddar cheese, the dish bakes until golden, bubbling, and full of comforting flavor. It’s a delicious all-in-one meal for family dinners when you want something filling, flavorful, and easy to serve.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
- 6 slices bacon, chopped
- 3 cups potatoes, diced into ½-inch cubes
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon fresh thyme leaves
- ½ teaspoon paprika
- 1 cup shredded sharp cheddar cheese
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
Instructions
- Prepare the oven: Preheat the oven to 375°F (190°C). Lightly grease a 9 × 13-inch baking dish and set aside.
- Cook the bacon: Heat a large skillet over medium heat and cook the chopped bacon until crisp. Transfer it to a paper towel-lined plate using a slotted spoon, leaving the rendered bacon fat in the skillet.
- Sauté the aromatics: Add the diced onion to the skillet and cook until softened. Stir in the minced garlic and cook for another minute, until fragrant.
- Sear the chicken: Move the onion and garlic to one side of the pan. Add the chicken breasts and season with salt, black pepper, and paprika. Sear for 3–4 minutes per side, until lightly golden. Transfer the chicken to a cutting board and slice into strips.
- Partially cook the potatoes: Add the diced potatoes to the same skillet and cook for approximately 5 minutes, stirring occasionally, until they begin to soften.
- Assemble the casserole:
