Instructions
1. Heat the Oven
Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly coating it with oil.
2. Prepare the Potatoes
- Rinse the potatoes thoroughly and dry them well.
- Using a sharp knife, make thin slices across the top of each potato, spacing them about ⅛ inch apart. Be careful not to cut all the way through—leave about ¼ inch intact at the base.
- Helpful tip: Place chopsticks or wooden spoon handles along both sides of the potato to prevent cutting too deeply.
3. Mix the Herb Oil
In a small bowl, stir together:
- Olive oil
- Minced garlic
- Dried rosemary
- Dried thyme
- Salt
- Black pepper
Mix until the seasonings are evenly combined.
4. Coat the Potatoes
Brush the herb mixture generously over the potatoes, making sure it gets between the slices. Save a small portion of the mixture to apply later during baking.
5. Bake
Arrange the potatoes on the prepared baking sheet with a little space between each one. Bake for 45–50 minutes, or until the edges become crisp and golden while the centers remain soft and fully cooked. Halfway through cooking, brush the potatoes with the reserved seasoning mixture for added flavor and crunch.
6. Finish and Serve
Allow the potatoes to cool for a few minutes before serving. Sprinkle with freshly chopped parsley if desired. Enjoy them hot as a side dish or snack. For extra indulgence, top with sour cream, grated cheese, or a pat of melted butter.
