Sour Cream Blueberry Coffee Cake

Ingredients:

  • All-purpose flour – 2 cups
  • Granulated sugar – 1 cup
  • Unsalted butter, softened – ½ cup
  • Eggs – 2 large
  • Sour cream – 1 cup
  • Vanilla extract – 1 teaspoon
  • Baking powder – 1 teaspoon
  • Baking soda – ½ teaspoon
  • Salt – ¼ teaspoon
  • Fresh blueberries – 1½ cups
  • Brown sugar – ½ cup
  • Ground cinnamon – 1 teaspoon

Instructions:

  1. Prep Oven and Pan
    • Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Make the Batter
    • In a large bowl, cream together the softened butter and granulated sugar until fluffy.
    • Beat in the eggs one at a time, mixing well after each addition.
    • Stir in the sour cream and vanilla extract until smooth.
  3. Combine Dry Ingredients
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
    • Gradually fold the dry mixture into the wet ingredients until fully incorporated.
  4. Add Blueberries

    • Spread the remaining batter on top and finish with the remaining streusel.
