Fresh-Baked Lemon Blueberry Treat

This quick bread comes out incredibly moist and flavorful, with a soft crumb dotted with juicy blueberries and brightened by fresh lemon zest, all topped with a simple lemony glaze.
Lemon Blueberry Bread
Ingredients (Bread):
- Melted butter – 1/3 cup
- Sugar – 1 cup
- Lemon juice – 3 tbsp
- Eggs – 2
- All-purpose flour – 1 1/2 cups
- Baking powder – 1 tsp
- Salt – 1 tsp
- Milk – 1/2 cup
- Grated lemon zest – 2 tbsp
- Chopped walnuts (optional) – 1/2 cup
- Fresh or frozen blueberries – 1 cup
Glaze Ingredients:
- Lemon juice – 2 tbsp
- Melted butter – 1 tbsp
- Confectioners’ sugar – 1 cup
Instructions
Step 1: Get Ready
Set your oven to 350°F (175°C) and lightly grease a loaf pan.
Step 2: Blend Wet Ingredients
In a mixing bowl, whisk together the melted butter, sugar, lemon juice, and eggs until the mixture is smooth and well combined.
Step 3: Mix the Dry Ingredients
In another bowl, stir together the flour, baking powder, and salt.
Step 4: Bring It Together
Add the dry mixture to the wet ingredients in batches, alternating with the milk. Mix only until everything is incorporated.
Step 5: Add Zest & Mix-Ins
Gently fold in the lemon zest, the walnuts if you’re using them, and the blueberries so they’re evenly dispersed throughout the batter.
Step 6: Bake the Loaf
Transfer the batter into your prepared loaf pan and level the top. Bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean.
Step 7: Make the Glaze
While the bread is in the oven, whisk together the lemon juice, melted butter, and confectioners’ sugar until smooth and pourable.
Step 8: Add the Glaze
When the bread is done, let it cool for a few minutes, then drizzle the glaze over the warm loaf.
