1. Preheat & Prepare
Heat the oven to 375°F (190°C). Lightly coat a 9×13-inch baking dish with cooking spray.
2. Cook the Beef
In a large skillet set over medium-high heat, brown the beef until completely cooked through. Drain off any leftover grease.
3. Sauté the Vegetables
Add the onions, bell peppers, mushrooms, and garlic to the skillet. Cook for 5–6 minutes, or until they soften. Season with salt, pepper, smoked paprika, and the Worcestershire sauce.
4. Layer the Mixture
Spread the cooked beef and vegetables evenly in the prepared baking dish.
5. Mix the Creamy Layer
In a medium bowl, whisk the softened cream cheese, mayonnaise, and eggs together until smooth and well combined.
6. Assemble the Casserole
Pour the creamy mixture over the meat and vegetables. Sprinkle the shredded provolone and mozzarella cheese over the top.
7. Bake
Bake for 25–30 minutes, or until the cheese is bubbly and lightly golden.
8. Rest & Serve
Let the casserole sit for 5 minutes before cutting into it. Serve on its own, or pair it with a fresh salad, crusty bread, or toasted hoagie rolls.
