Granny Cake

Ingredients

For the Cake:

1. Prepare the Cake Batter
Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. In a large mixing bowl, combine the sugar, flour, baking soda, and salt. Add in the eggs and crushed pineapple (with juice), stirring until everything is just mixed.

2. Assemble and Bake
Pour the batter into the prepared pan. Sprinkle the brown sugar and chopped pecans evenly over the top of the batter. Bake in the oven for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

3. Make the Glaze
While the cake is in the oven, heat the evaporated milk, sugar, and butter in a medium saucepan over medium heat. Bring it to a gentle boil, stirring occasionally.

4. Finish the Cake
Remove the glaze from heat and stir in the vanilla. Once the cake comes out of the oven, pour the hot glaze over the warm cake, making sure it covers the entire surface. Let the cake sit so the icing can soak in completely.
