Step 1: Make the Batter
In a large mixing bowl, combine all ingredients except the oil: flour, cornmeal, sugar, baking powder, milk, chopped onions, salt, and pepper. Mix well until the batter is smooth and evenly combined.
Step 2: Heat the Oil
In a deep skillet, heat ½ to 1 inch of oil over medium-high heat. Aim for the oil to reach 350°F (175°C) for ideal frying.
Step 3: Fry the Fritters
Using a tablespoon, scoop and gently drop batter into the hot oil, flattening each spoonful slightly as it cooks. Work in batches to avoid overcrowding.

Fry each fritter for 2–3 minutes per side, or until both sides are golden brown. Use a slotted spoon to transfer them to a paper towel-lined rack to drain excess oil.
