This hearty casserole brings all the best elements of a taco night into one easy, oven-baked dish. With layers of seasoned beef, beans, corn, crunchy chips, and gooey cheese, it’s a guaranteed crowd-pleaser for busy weeknights or casual gatherings.

  1. Preheat and Cook Beef
    Preheat your oven to 350°F (175°C).
    In a large skillet over medium heat, cook the ground beef until fully browned. Drain off any excess grease.
  2. Season the Beef
    Stir in the taco seasoning and salsa. Let the mixture simmer for a few minutes until slightly thickened.
  3. Mix with Beans and Corn
    In a large bowl, combine the seasoned beef with black beans and frozen corn. Stir until everything is well incorporated.
  4. Layer the Casserole
    • Spread half of the crushed tortilla chips across the bottom of a 9Ă—13-inch baking dish.
    • Spoon the beef-bean-corn mixture evenly over the chips.
    • Sprinkle with half of the shredded cheese.
    • Add the remaining crushed chips, then top with the rest of the cheese.
    • Finish with sliced olives and green onions.
  5. Bake
    Place the casserole in the oven and bake for 20–25 minutes, or until the cheese is melted and bubbly throughout.
  6. Cool and Garnish
    Let the casserole rest for a few minutes before serving. Garnish with chopped fresh cilantro, if desired.
